Grilled Peach & Burrata Salad
Nothing says summer quite like fresh peaches on the grill. This elegant yet simple salad combines sweet grilled peaches, creamy burrata, peppery arugula, and savory prosciutto for a dish that’s perfect alongside grilled chicken, steak, or as a light lunch on the patio.
Ingredients
- 3–4 ripe but firm peaches, halved and pitted
- 8 oz burrata cheese, torn into pieces
- 5 oz fresh arugula
- 2–3 oz prosciutto, torn
- Fresh basil or mint leaves
- Extra-virgin olive oil
- Balsamic glaze
- Flaky sea salt
- Fresh cracked black pepper
- Optional: Toasted pecans, pistachios, or pine nuts for extra crunch
Directions
- Preheat your grill to medium-high heat and lightly oil the grates.
- Brush the cut side of each peach with olive oil and grill cut-side down for 3–4 minutes until lightly charred with beautiful grill marks.
- Arrange the arugula on a large serving platter and drizzle lightly with olive oil.
- Top with the warm grilled peaches, torn burrata, prosciutto, and fresh basil.
- Finish with a generous drizzle of balsamic glaze, a little more olive oil, flaky sea salt, and freshly cracked black pepper.
- Sprinkle with toasted nuts if desired and serve immediately with warm, crusty bread.
